Journey of Eggless Baking

This blog is about the story of MJ Bakes. I am author Monika sharing a few memories of my baking journey. It was the year 2020 when everyone was locked in their homes for Covid. Everyone tried to find a new hobby to keep us engaged and entertained for the day. The idea of baking came to me, and that was the start of my baking days.

As a vegetarian, I was always eager to know about eggless baking. To me, good baking was only possible with eggs. Watching Youtube baking videos became my daily routine. Finally, the day arrived when I started baking. It was not easy as I had no experience in baking and was learning from scratch. Slowly-slowly I learned the art of baking.

Eggless baking means the practice of baking without using eggs as an ingredient. There can be various reasons, including dietary restrictions, allergies, ethical concerns, or the unavailability of eggs. Many people have successfully adapted traditional baking recipes to create delicious egg-free versions. 

Different types of cakes can be baked eggless. 

  1. Eggless Chocolate Cake: Favorite of everyone, made without eggs and still rich and moist because of buttermilk, yoghurt and vinegar.
  2. Eggless Vanilla Cake: This light and fluffy cake is flavoured with vanilla extract and often uses substitutes like yoghurt or applesauce to replace eggs.
  3. Eggless Red Velvet Cake: A vibrant red cake often flavoured with cocoa and vanilla, made eggless using ingredients like vinegar or buttermilk.
  4. Eggless Carrot Cake: A moist cake filled with grated carrots, raisins, and nuts, often made eggless using yoghurt or applesauce.
  5. Eggless Banana Cake: Use ripened bananas to provide moisture and flavour to this cake, eliminating the need for eggs.
  6. Eggless Lemon Cake: Zesty and refreshing lemon cakes baked eggless using yoghurt, vinegar, or buttermilk.
  7. Eggless Pineapple Upside-Down Cake: This fruity delight with pineapple slices and cherries on the bottom, with a moist cake batter on top.
  8. Eggless Coffee Cake: Often flavoured with coffee or espresso, this cake can be made without eggs using yoghurt, applesauce, or silken tofu.
  9. Eggless Almond Cake: Almond flour or ground almonds can replace eggs in this nutty and delightful cake.
  10. Eggless Coconut Cake: Grated coconut adds flavour and texture to this cake, which can be made without eggs using yoghurt or applesauce.
  11. Eggless Oreo Cake: Crushed Oreo cookies can be incorporated into the batter to create a delicious chocolate treat.
  12. Eggless Black Forest Cake: Layers of chocolate sponge cake, whipped cream, and cherries make up this classic dessert, which can be adapted to be eggless.
  13. Eggless Marble Cake: A combination of vanilla and chocolate cake batters swirled together, made eggless using yoghurt or buttermilk.
  14. Eggless Strawberry Shortcake: Layers of tender cake, fresh strawberries, and whipped cream come together in this delightful dessert, which is baked eggless.

Chocolate cakes are a popular and delicious dessert made using chocolate as one of the main ingredients. There are various types of chocolate cakes, each with its unique characteristics and flavours. Here are a few common types of chocolate cakes:

  1. Devil’s Food Cake: This chocolate cake is known for its deep, rich chocolate flavour. Made using cocoa powder and sometimes even melted chocolate for an intense chocolate taste.
  2. Black Forest Cake: Originating from Germany, this cake features layers of chocolate sponge cake filled with whipped cream and cherries.
  3. Chocolate Fudge Cake: This cake is incredibly moist and dense because of melted chocolate and sometimes even chocolate chips in the batter.

These are just a few examples of the many variations of chocolate cakes. They come in different sizes, shapes, and flavours, making them a delightful treat for chocolate enthusiasts. Chocolate cakes are the reason I turned out to be a baker.

Baking is an Art

Cakes play a significant role in birthdays, not only as delicious treats but also as a means to express emotions and create memorable moments. The type of cake, design, and the feeling it conveys can vary widely based on personal preferences and cultural influences. I remember baking birthday cakes for my relatives and friends’ birthdays. The pleasure baking gave me was immense. On any occasion coming on the way, I used to find new recipes for baking cakes. Baking a cake is an emotion that shows how much thought and care has gone into making the birthday person feel special.

Baking is a complex scientific process that involves various chemical and physical reactions. Understanding these scientific principles helped me in a more skilled and adaptable baker, as I could troubleshoot issues, make adjustments, and experiment with recipes more effectively. Successful baking includes precise measurements, accurate oven temperatures, proper mixing techniques, and appropriate timing. Additionally, creativity can flourish in baking, allowing individuals to experiment with flavours, decorations, and presentations that reflect their personal touch. It took me days and months to learn these details.

Baking is a source of inspiration that transcends the kitchen. The process involves creativity, precision, and patience, making it a metaphor for various aspects of life. Incorporating the inspiration from baking into my daily life helped me in personal growth, enhanced creativity, and a deeper connection to the world. Just as the ingredients in a recipe come together to create something delicious, the various aspects of inspiration from baking enriched my life in meaningful ways.

Baking isn’t always smooth sailing; challenges arise, such as ingredient substitutions, oven temperature fluctuations, or unexpected outcomes. Bakers learn to adapt, troubleshoot, and find solutions. This problem-solving approach can translate to overcoming obstacles in various life situations. Baking, while enjoyable and rewarding, can present a variety of challenges. The quality of ingredients used can affect the outcome of baked goods. Subpar or expired ingredients can lead to undesirable results. Oven temperatures can vary, and some ovens may not maintain a consistent temperature throughout the baking process. It can lead to unevenly baked or overcooked/undercooked items. Substituting ingredients can be tricky, especially in baking.
